Caring for guests

Lesson 2 of 7 · Caring for guests

Ask enough before you recommend

Understand the need so you never suggest by guessing

The word “light” alone is not enough to choose a drink

A guest who says “I want something light, not too sweet” could still mean many different things: with milk or without, floral or roasted rice, light tea or strong, hot or iced, and whether there is any ingredient to avoid.

So do not rush to name a drink. Ask about the things that could change the choice.

Five things to clarify

You do not need to ask all five with every guest. Start from what the guest has already said, then keep asking until you have enough to give one or two suggestions with a reason.

1. Which group does the guest want? Trà Original (the plain tea version, no milk), milk tea, Trà Dưỡng (the herbal tea line), fruit tea, matcha, chocolate or coffee. If the guest is not sure, ask whether they want a clear tea taste, soft milk, fresh fruit, herbs, cocoa or coffee.

2. What aroma and taste does the guest like? Floral, roasted rice, milk, fruit; light or strong; and whether they can take a little astringency.

3. How does the guest want the sugar, milk and ice? Less sweet does not mean no milk. No milk does not mean no sugar.

4. Is there anything the guest needs to avoid? If the guest asks about allergies or a specific ingredient, check the official information; do not guess.

5. How long can the guest wait? This matters most when the guest chooses Trà Dưỡng or the store is busy.

A consultation with enough information

Guest: “I want something light, not too sweet.”

Staff: “Certainly. Would you like tea with milk, or plain tea so the tea flavour comes through more clearly?”

Guest: “No milk.”

Staff: “Do you prefer a light floral note, a nutty roasted rice note or a slightly stronger tea?”

Guest: “Light floral, I cannot take astringency.”

Only now do you have enough information to choose one or two suitable drinks, state the suggested sugar level clearly and let the guest decide.

The two choices: Sữa Bột and Sữa Nước

Floral milk tea lets the guest choose the milk base. The two bases give two different feelings, and the store has agreed on how to describe them:

Sữa Bột (creamer): rich and round, full in the mouth, for guests who like a strong, creamy milk tea.

Sữa Nước (milk): light and clean, leaves the mouth fresh, lets the tea aroma stand out more, for guests who like a lighter drink or want to taste the floral notes clearly.

Ask by the experience first, then name the base:

Would you like a fuller milk taste, or the tea base to come through more clearly? For rich and round I will make it with Sữa Bột, for light and clean I will make it with Sữa Nước.

The three drinks in the Signature box use Sữa Nước by their set recipe and the base cannot be changed; tell the guest before they pay.

When you are not sure, look it up

Let me check the drink information for a moment so I can advise you accurately.

This is more professional than a quick answer that is wrong. Guests need clarity, not staff who know everything from memory.

Look up drink ingredients

Take this with you. Without enough information, do not name a drink yet. One more question is better than guessing for the guest.
